Concept

  • Primitive, Nostalgic, and Innovative. The ultimate expression of Hokkaido gastronomy.

Historical & Terroir
Experience
in Shakotan – Otaru

Shakotan, once thriving on herring fisheries;
Otaru, prospering through the Kitamaebune
trading ships; and at their origin, the lingering
echoes of Ainu and Jōmon heritage.

From the deep azure peninsula revealed by sunlight, to the canals and warehouses that symbolised modern development — worlds that seem apart, yet miraculously connected through nature’s bounty and the lineage of gastronomy, forming one grand history and pointing toward the future.

Jōmon / Primitive – Modern / Nostalgic – Contemporary / Innovative
Three themes converge, rising as a single texture and terroir — the very essence of Hokkaido gastronomy.

Each era carries memories and passions, while nature’s blessings continue to embrace us. With heartfelt gratitude, embark on a supreme journey that comes alive only here, only now.

The Shakotan Peninsula is shaped by
an ancient story woven between sea and
mountains over the passage of time.

From there unfolds the path to Otaru —
the “Heart of Hokkaido,”
a port that journeyed from the era of
Kitamaebune trade into the age of modernisation.

And now, a new realm of gastronomy emerges,
where past, present, and future flow in a continuous circle.
